Garlic –
minced to taste
1 stick Butter
1 can tomatoes w/ green chilies
LACrawfish Co. Creole Seasoning
Chop bell pepper, onion, & celery &
set aside -- Melt butter in pan --
Sauté vegetables until wilted -- Add alligator meat,
1 cup water (or white wine) & 1 can tomatoes
w/ chilies. Simmer until alligator is fork tender,
do not overcook -- Use corn starch
or flour to thicken.
Serve over rice with hot French bread and Enjoy!
