Crawfish Etouffee

                  1 to 1 1/2 sticks butter
                  2 tsp. salt
                  1 tbsp. flour

                  1 med. onion, chopped fine
                  1/2 bell pepper, chopped fine
                  2-3 pods garlic, chopped fine


1 lb. crawfish tails w/ fat

salt and pepper to taste
LACrawCo Creole Seasoning

3-4 green onions, chopped
parsley, chopped

 


Melt butter in skillet -- Add flour and salt until blended

Add onion, bell pepper, & garlic -- cook until tender  

Add crawfish & cover -- Cook 15- 20 min. on low heat

Add salt, pepper & creole seasoning to taste

Add gr.onions & parsley -- simmer until seasonings blend.

Serve over rice with hot french bread! 
Yield 4-6 Servings.

Note: Alligator meat or shrimp may be substituted for the crawfish.
