Ponchatoulas Louisiana Story

Our story starts the way everything starts in Louisiana – with good food, music and fun! Johnny Gaudet was raised in Cajun Country. He was born and grew up in a small town in south Louisiana, Morgan City. Growing up in the heart of the Delta his family cooked Cajun food consisting of lots of seafood and game. Gumbo’s, Ettouffee, and Creoles were staples in their household.

A lifelong dream had been to open a restaurant and he decided to pursue his dream. With $8,500, 3 borrowed crock pots, and paper plates they opened a hole in the wall called Ponchatoulas. It should have never made it but with blood sweat and tears it has been in business for over 20 years. Ponchatoulas is still open today and is a staple in the Ruston community with a fantastic atmosphere, Cajun food, catering, and seasonal crawfish.
