What if some or all of my crawfish arrive dead?

What are some interesting facts about crawfish?

They are an excellent source of high-quality protein. They are low in calories, fat, and saturated fat. They are a good source of vitamins. Crawfish muscle fibers are shorter than the muscle fibers in red meats and are more easily digested. Crawfish are packed with nutrients such as biotin, calcium, iron, niacon, phosphorus, protein, selenium, vitamin A, vitamin B-6, and vitamin B-12. It takes approximately 7 pounds of live crawfish to yield 1 pound of peeled tails. Large, mature crawfish have a lower yield of meat per pound than immatire crawfish. Although crawfish tend to be higher in cholesterol than most other shellfish, a 3.5 ounce serving provides only about half of the daily recommended allowance. Consuming a diet high in seafood has been shown to reduce the incidence of Alzheimer's, angina, stroke, asthma, heart disease and cancer.

Do crawfish bite? Will they hurt me?

They do not bite, but watch out for those claws!

Which is better, Crawfish or Shrimp?

Both are equally delicious & so good for you! Crawfish have a creamier texture & stronger flavor. While Shrimp are more dense & taste buttery.

What months are crawfish season?

Weather permitting, crawfish season is roughly December through July, with the peak season being February - May.

What does crawfish taste like?

Crawfish have a very unique flavor, they are stronger & meatier than lobster. It is more subtle and less tough than shrimp and is sometimes described as combination of shrimp and crab. Slightly salty, sweet and with a little bit of mineral flavor.

Why purge crawfish?

To clean out the exoskeleton of mud and debris & eliminates or reduces digesta in the intestine. We place the crawfish in our highly oxygenated water tanks, then put them through a innovative 12-24 hour purging process. You are left with sweet, tender, flavorful crawfish.

Do crawfish have to be alive when cooked?

No, but the prevailing theory for avoiding cooked crawfish with non-curled tails is based on a safety concern. The theory goes that cooked crawfish with straight tails were dead before cooking and, without knowing how long the animals had been dead or how they were stored, it is best to avoid consuming them.

Why are crawfish called mudbugs?

They live in the mud of freshwater ponds & bayous, hence the mudbug nickname.

How do i boil crawfish?

Rinse them until draining water is clear. Fill the large pot half full with fresh water, place on outdoor propane cooker, and start the fire. Place the lid on the pot and bring water to a boil. While you wait for water to boil, rinse the crawfish with fresh cool water until draining water is clear. Pour the crawfish into the cooking basket and lower the basket into the pot. Bring to a boil and cook the crawfish for 15 minutes. Turn the heat off and allow the crawfish to simmer in the liquid for an additional 15 minutes. Remove the crawfish and serve with the potatoes, corn, sausage, etc.

How do i eat crawfish?

Traditionally for crawfish boils they are served with corn, potatoes, sausage, etc. It is such a versatile protein, the meat can be fried, sauteed, used in soups, etouffees, bisques, gumbos, tossed in pasta, served over rice, made into a crawfish pie, used in salads, the possibilities are endless.

How do I clean crawfish?

How do i peel crawfish?

1. Hold the head - Hold the head with one hand and extend the tail all the way out. 2. Twist the head off - Place your thumb and forefinger on either side of the head and twist until the head separates from the tail. 3. Grab the tail - Put the head aside and focus on the tail, to get all the best meat. At this point, many people will suck the head for extra flavor. 4. Start peeling - Use your thumb and start peeling from the wide part of the tail. Peel layer by layer to loosen the meat away from the tail. The amount of layers you have to peel depends on the crawfish, so be patient. Be careful, if the crawfish are juicy this step may get a little dirty. 5. Pinch the tail & wiggle the meat out. 6 Enjoy!

Can shrimp be refrozen?

Yes, you can freeze shrimp after cooking.

Do I have to remove the vein in a shrimp?

It is not necessary to remove the vein in the shrimp, but many people do when peeling or butter flying them.

How do I cook shrimp?

What is your best shrimp recipe?

There are so many wonderful ways to prepare Shrimp....We love to sauté peeled shrimp in 1 stick of butter, with 1 T. of Fresh Garlic, 1/2 of a lemon, 1/4 C. (or to your taste) of our Louisiana Crawfish Boil. Melt butter, stir in boil, add fresh garlic. Sauté shrimp for approximately 3 minutes, until they turn pink. Squeeze fresh lemon over them. You may serve them like they are, or, over pasta, or rice. Make sure you have plenty of French bread on hand to soak up all of the delicious juices! There are SO many great recipes for Shrimp!!!

What can i use to thicken gumbo?

Traditionally it is oil & flour, cooked low & slow.....Stir, stir, stir. We also offer already prepared roux like Kary's Roux Base. File gumbo is also a great thickener, just do not use too much, or it will make your gumbo "roapy".

Are gumbo and jambalaya the same?

No, for Gumbo you have a soup/stew base vs. a casserole-type base for Jambalaya.

Can you make gumbo roux in advance?

You sure can & it can be refrigerated for up to 2 weeks, to use when you are ready.

What should the consistency of gumbo be?

Most natives prefer it to be rich, thick & chocolate in color.

What is the difference between creole and cajun gumbo?

While both are delicious options, a common debate in Louisiana pits Creole gumbo (City Food) vs.Cajun gumbo (Country Food). ... Creole gumbos most often include tomatoes, shellfish and dark roux and often okra and filé powder, an herb made from ground leaves of sassafras trees. Turducken FAQs

How long does it take to cook a turducken?

At least 4-5 hours. It is important to reach an internal tempretaure of 165 degrees & let it rest 20-30 minutes before carving & serving.

How to you thaw a turducken quickly?

Place in cold water for 6-9 hours. The cold water should be below 40 degrees.

How long will a frozen turducken last?

If packaged properly, at least a year.

How do you cook a frozen turducken?

That is not recommended. Make sure it is thawed properly prior to cooking.

What is a turducken?

It is a dish consisting of a deboned chicken stuffed into a deboned duck, further stuffed into a deboned turkey, filled with different stuffing's.

Can you cook a turducken in an oven bag?

Yes! It works BEAUTIFULLY! Follow the instructions on the bag, making sure to shake 2 T. of flour to coat the inside of the bag, making small slits in the top of the bag. Bake at 375 degrees until the internal temperature reaches 165 degrees.

How do you slice a turducken?

Cut away wings & slice in half, lengthwise. Lay the cut sides down flat, remember to rest for 20-30 minutes prior to carving. Cut in even slices. Repeat on the other half.

How do you fry a frozen meat pie?

Deep frying is the best method to cook a meat pie. Heat oil to 375 degrees and fry for 5-6 minutes, until golden brown.

What is in a Natchitoches meat pie?

The Natchitoches meat pie (one of the official state foods) is a regional dish from northern Louisiana. Ingredients include ground beef, ground pork, onions, peppers, garlic, this savory meat filling is in a crescent shaped, flaky wheat pastry turnover. We also offer a crawfish pie version. Natchitoches meat pies are often fried in peanut oil because of that oil's high smoking temperature.

What is boudin?

A delicious combination of pork, rice and seasonings in a sausage casing.

How do you cook raw boudin?

BAKE: Preheat oven to 300 degrees, place links on an oiled cookie sheet for 20 minutes, turning over every 5 minutes, for a crispy skin. STEAM COOKING: Place links in a rice cooker with a little water to cover the bottom. Heat for 3 to 5 minutes on Cook cycle, then change settings to Warm.

Do you eat the casing on boudin?

If it's boiled, the casing has a chewy texture that can be hard to swallow. If grilled or smoked, however, it adds a nice crunch to the gooey consistency of the rice and pork stuffing.

Can you eat the yellow stuff in crabs?

The yellow matter is fat deposits, it is edible & many people love to eat it on a cracker.

Where can you catch blue crabs?

Our Louisiana Blue Crabs are caught in the salty waters of Lake Ponchartrain & The Gulf Of Mexico.

How do you catch blue crabs?

Our commercial crabbers use crab traps. When we were children we used string with a chicken neck & a scoop net!

How can I tell the difference between a male and a female?

Female crabs have beautiful, vivid coloring & a clam shape on their underside. Male crabs have a more subdued coloring & a pointed sphere shape on their underside.

How many lbs of crab should i buy per person?

The average for natives, is 6 crabs per person. However, with other served items, typically 3-4 crabs per person.

When is crab season?

Live crab may be gotten year-round, However, peak season & best quality is approximately April through November, weather permitting. There is NO Commercial harvest of female blue crabs in Louisiana waters from and March 1 to April 30, 2019. This is to ensure the healthy breeding of the species.

How to eat louisiana blue crabs?

Pull the claws off of the crab, eating the meat inside. Many people suck the juices from the claws. Peel the back & clean the lungs (looks like feathers). Crack them in half, use a butter knife or a seafood picker to pull out all the meat.

How to cook louisiana blue crabs?

Typically they are boiled or steamed.

How to boil Louisiana blue crabs?

Add more seasoning to crab boil water than you would other any seafood. Crabs have a hard shell, take longer to boil and longer to absorb flavors. As a general rule, whatever you use for your crawfish boil, use 1-1/2 more for crabs. Chill the crabs. Place crabs in an ice chest and cover them with ice and water. Ice them until they don't move. This will put the crabs to "sleep" while you prepare the water for boiling. It makes them easier to handle and helps you avoid those pinchers. Boil potatoes and garlic first. Potatoes should be fork tender. Turn the fire off and add your liquid & dry boil. Turn off the flame and then add rough-chopped celery and cut-up lemons, oranges, & a handful of bay leaves into the hot water. Carefully add the crabs. Remove the basket from the boiling pot & drain the water from the "sleeping" crabs and then add them back to the basket. Then, slowly lowers the crabs back into the boiling water. This method insures less splash from the boiling water & by lowering them, it keeps them whole. Boil the crabs.Turn the flame back on and bring the pot to a full and rolling boil, allowing it to hard boil continuously for just 2 minutes. Then, turn the fire off. Drop in any additions, such as mushrooms, frozen corn, sausage, etc. Allow the crabs and your add-in's to soak for 30 to 45 minutes. Do not stir the crabs with a paddle, just allow them to soak undisturbed. Stirring may knock the legs off of the crabs. Test crabs for flavor. Pull a crab out. Taste it. If it needs to soak a bit longer, give it another 10 minutes or so. How long you soak the crabs depends on a number of issues, including the size, weight and fullness of the crabs. Let crabs rest. Once the crabs are ready to eat, lift the basket from the boiling pot. Rather than dumping the crabs and vegetables on a table, it is better to take each crab out, with tongs. This, once again, avoids knocking the claws off. Let them cool as they much are easier to peel and taste better when they are not piping hot.

How many blue crabs in a pound?

In the Number 1 crabs (Jumbos) there are approximately 1.5 crabs to a pound. For the number 2 Male crabs (selects) there are 2.04 crabs per pound. For the Number 2 Female crabs (select) there are 2.04 crabs per pound.

How big are Louisiana blue crabs?

#1's are approximately 6.25" & up, across; #2 males are approximately 5.25" - 6.25" across; & #2 female crabs are approximately 5.25" and up, across.

How to steam blue crabs?

Set up the boil basket for the crabs. The basket insert should sit 2 to 3 inches above the bottom of the pot so that the crabs do not touch the liquid beneath. Add 1 1/2 cups water, beer, vinegar and 2 tablespoons Louisiana Crawfish Company Boil to the bottom of the pot. Stir with paddle to combine and bring to a simmer. Layer the crabs in the steamer basket, generously sprinkling with a little salt and the remaining seafood boil seasoning on each layer of crabs. Cover the pot and steam the crabs for 30 minutes. The cooked crabs should be a bright orange color throughout with no trace of blue or green. Cool before peeling.

Should I steam or boil blue crabs?

Steaming vs. boiling is a personal preference. Many people in the southern states like to boil them as they soak up all the delicious flavor!
