Crawfish Stuffed Potatoes

  • 12 Stick(s) butter
  • 1 Cup(s) grated cheddar cheese
  • 1 Bunch(es) green onions
  • 1 Pound(s) Louisiana Crawfish Tail Meat
  • 1 Bunch(es) parsley
  • 1 Pound(s) Velveeta cheese, cubed

  1. Bake potatoes in oven
  2. Remove from oven and let cool
  3. Sauté crawfish, parsley, and green onion in butter until tender
  4. Season to taste
  5. Reduce heat and add Velveeta cheese
  6. Remove from heat when cheese is melted
  7. Scoop out potato and add to crawfish mixture folding all ingredients together
  8. Spoon mixture back into potato skins and sprinkle with grated cheddar cheese
  9. Bake until hot and cheese is melted
