Grader tables are on each
catch boat allowing smaller crawfish to return to the pond &
mature to market size.

Prior to being packed,
crawfish go through two wash (purged) processes to insure clean,
ready to cook, crawfish!

Each hydraulic driven
and steered catch boat, operated by one person, has the ability
to catch, grade and rebait traps daily during peak harvest times.

Since its inception as
a 90-acre family recreation area, our farm has grown into a several
hundred acre impoundment of shallow water ponds mainly managed for
the production of live crawfish. It has also evolved into a winter
haven for migrating water fowl and other types of wildlife which
is appreciated by everyone from sportsmen to birdwatchers.

Commonly seen in the waters of Louisiana,
these birds and other
wildlife love crawfish
as much as we do!

Ongoing land improvements
include refining levee & road systems and
cooperative efforts with wildlife and conservation programs to preserve
natural habitat.

One of the questions we're
commonly asked about here at Louisiana Crawfish Company is "What
is Mardi Gras?"
Well, there really isn't
a simple answer to that question, but to give you some idea, take
a look at some pictures of our staff and our friends at a recent
Mardi Gras event...and we promise we don't always look like this.
