Beer, Cheese, and Crawfish Soup

Ingredients and Method

Ingredients
  • 2 onion, chopped fine
  • 3 Pint(s) heavy cream
  • 2 Pint(s) clam juice
  • 2 Quart(s) cheddar cheese
  • 2 Pound(s) crawfish tails
  • 1 Tablespoon(s) nutmeg
  • 1 Tablespoon(s) garlic powder
  • 1 Tablespoon(s) white pepper
  • cayenne pepper
  • 1 Quart(s) your favorite beer
Method
  1. Sautee onions in butter in large stock pot Show
  2. Add 2 lbs crawfish tails and sautee Show
  3. Add heavy cream and clam juice then stir Show
  4. Add cheddar cheese and bring to a boil Show
  5. Add nutmeg, white pepper, garlic powder, and cayenne pepper (to taste) Show
  6. Add 1 qt of your favorite beer and simmer for 30 minutes Show
