Crawfish Monique

This is a very simple and elegant dish and will impress your guests in a big way!! It's one of the most popular dishes served at the New Orleans Jazz & Hertiage Festival. If you don't have crawfish available in your area, it works well with shrimp, oysters or crabmeat.

Ingredients and Method

  1. Cook pasta according to the directions on the package Show
  2. Drain and rinse under cool water Show
  3. Drain again, thoroughly Show
  4. Melt the butter in a large pot Show
  5. Sautee onions and garlic for 3 minutes Show
  6. Add seafood and sautee for 2 minutes Show
  7. Add Half-and-Half Show
  8. Add Creole seasoning to taste Show
  9. Cook for 5-10 minutes over medium heat intil sauce thickens Show
  10. Add pasta and toss well to coat Show
  11. Let sit for 10 minutes and very low heat, stirring often Show
  12. Serve immediately with hot french bread Show
