Crawfish Rotini

Ingredients and Method

Ingredients
  • 4 Tablespoon(s) extra virgin olive oil
  • 5 Pound(s) dry Rotini pasta (tri-color)
  • 34 Cup(s) crawfish fat
  • 2 Pound(s) onions, finely chopped
  • 13 Cup(s) garlic, minced
  • 3 Quart(s) heavy whipping cream
  • 1 Cup(s) dry white wine
  • 1 12 Teaspoon(s) white pepper
  • 12 Pound(s) butter
  • 1 Tablespoon(s) granulated onion powder
  • 2 Pound(s) Louisiana Crawfish Tail Meat
  • 1 Bunch(es) shallots, chopped
  • 14 Bunch(es) parsley, chopped
  • 2 Cup(s) grated Romano cheese, devided
  • 1 Tablespoon(s) Louisiana Crawfish Creole Seasoning
Method
  1. Over medium. heat add butter, onions, and garlic Show
  2. Simmer until onions are clear for approximately 5 minutes Show
  3. Add heavy cream and wine and increase heat to rolling boil Show
  4. Add seasonings, crawfish fat, and tails Show
  5. Return to a boil Show
  6. Add shallots and pre-boiled pasta Show
  7. Fold pasta in gently to coat Show
  8. Add parsley and Romano cheese and serve with hot bread and salad Show
