  • 1 Pound(s) alligator tailmeat
  • 5 Ounce(s) white wine
  • 3 Ounce(s) olive oil
  • 1 Ounce(s) tarragon
  1. Cut alligator meat into 3/4" medallions Show
  2. Mix together white wine, olive oil, and tarragon Show
  3. Let the medallions stand in the marinade for at least 30 minutes (or overnight) Show
  4. Grill on a hot grill for 4-5 minutes until the meat is firm to the touch Show
