Joy's Alligator Stew

Ingredients

  • 2 Pound(s) alligator meat
  • 3 large onions, finely chopped
  • 1 12 Stick(s) butter
  • 3 Tablespoon(s) lobster base
  • 2 bell peppers, chopped
  • 6 Stalk(s) celery, chopped
  • 14 Cup(s) parsley
  • 1 Bunch(es) green onions, chopped
  • 1 Cup(s) red wine
  • 1 Can(s) Rotel tomatoes
  • 14 Ounce(s) diced tomatoes
  • 10 Ounce(s) fresh mushrooms, sliced
  • 2 Tablespoon(s) Worcestershire sauce
  • 2 Tablespoon(s) basil
  • 3 bay leaves
  • 1 Tablespoon(s) oregano
  • 1 Tablespoon(s) Louisiana Crawfish Creole Seasoning

Steps

  1. Cut alligator meat into bite sized pieces & soak in red wine for 1 hour or overnight Show
  2. In large black iron pot, sauté onions & butter & lobster base until dark golden brown stirring often Show
  3. Add bell pepper & celery & sauté until tender Show
  4. Add Rotel & canned tomatoes Show
  5. Add seasonings & simmer for 10 min Show
  6. Drain alligator meat reserving liquid Show
  7. Add mushrooms & drained alligator meat Show
  8. Cover & simmer approx 30 min until alligator is fork tender Show
  9. If needed, use reserved liquid, mix with flour & add to gravy to thicken Show
  10. Add gr onions & parsley & cook uncovered for 10 min Show
  11. Serve over rice with hot french bread Show
