Mama's Cajun Paella
Yields 10 - 20 servings

Ingredients

  • 14 Cup(s) butter
  • 14 Pound(s) olive oil
  • 1 Pound(s) Italian sausage links, cut into half-inch pieces
  • 2 Pound(s) chicken, bite-sized pieces
  • 1 12 Pound(s) large shrimp, peeled and deveined
  • 1 Pound(s) crawfish tail meat
  • 1 Pound(s) lump crabmeat
  • 2 Cup(s) onion, chopped
  • 1 Cup(s) bell pepper, chopped
  • 3 Clove(s) garlic, minced
  • 2 Cup(s) uncooked yellow rice
  • black and red pepper to taste
  • 1 Teaspoon(s) oregano
  • 1 Teaspoon(s) salt
  • 3 Cup(s) hot chicken broth
  • 1 Cup(s) clam juice
  • 2 tomatoes, chopped
  • 1 bay leaf
  • 10 Ounce(s) frozen peas
  • 14 Ounce(s) artichoke hearts, quartered
  • 4 Ounce(s) pimento slices
  • 2 lemons, cut into wedges

Steps

  1. Heat oil in butter, brown sausage; remove from pan and drain Show
  2. Brown chicken, remove & drain Show
  3. Sauté shrimp 3-4 min, remove & drain Show
  4. Sauté crawfish tails ‘til heated through, remove & drain Show
  5. To remaining oil, add onions, garlic, bell pepper, sauté ‘til tender Show
  6. Add rice, salt, pepper & oregano Show
  7. Cook over med heat approx 10 min, stirring occasionally Show
  8. Add chicken broth, clam juice, tomatoes, & bay leaf Show
  9. Bring to a boil & remove from heat Show
  10. Place chicken & sausage on bottom of a large baking pan Show
  11. Pour rice mixture over meats Show
  12. Cover & bake at 350 degrees for 1 hour, remove from oven Show
  13. Arrange shrimp, crawfish, crab meat, peas & artichoke hearts over rice mixture Show
  14. Cover & return to 350 degrees oven for approx 20 min Show
  15. Garnish with pimento & lemon wedges Show
