Oregon Residents:

  • When is crawfish season and what options are available during the off season?

    The typical season for live crawfish extends from December through July. Please note that the exact start and end dates can fluctuate by one to three weeks annually, depending on environmental factors.

    The peak season—the period offering the largest available crawfish and generally the lowest market prices—is typically concentrated in April and May. Similar to the general season, the timing of the peak harvest may shift by several weeks.

    Outside of the live season, we proudly provide our frozen, pre-boiled crawfish, ensuring a year-round supply for our customers.

    To receive the most current information regarding live crawfish availability, special promotions, and up-to-the-minute updates, we encourage you to subscribe to our email list and follow us across our social media platforms, including Facebook, Instagram, TikTok, and YouTube.

  • What size crawfish do you have?

    This guide provides a quick reference for the size grades and their typical availability throughout the season.

    • Field Run: 18-22 crawfish per pound. Sack contains a variety of sizes, generally the best value. This size is available throughout the entirety of live crawfish season (December – July).
    • Select: 12-17 count per pound. Crawfish have been sorted for larger, more uniform sizes, which yields better meat per tail but comes at a higher price. Generally available March – June.
    • Jumbo: 12 or less crawfish per pound. Jumbo crawfish are desirable because they yield a larger piece of tail meat, making the peeling process more rewarding. Primarily available during the peak season in April and May.

  • How do I hold live crawfish?

    Live crawfish are highly perishable and must be cooked on the day of delivery.

    We strongly advise against storing live crawfish overnight. Attempting to hold the product overnight significantly increases the risk of mortality.

    Our Guarantee Policy: Our guarantee for live crawfish is strictly limited to the date of delivery. Any crawfish held overnight is done so entirely at the customer’s risk, and no refunds will be issued for live product mortality incurred after the delivery date.

    Emergency Overnight Holding Method (Not Recommended):

    While we advise against holding the crawfish overnight, the following method offers the best potential for survival, though it is not guaranteed:

    1. Spray the sack down with fresh water.
    2. Place the sack into a cooler or ice chest that is equipped with a drain.
    3. Top the sack with loose ice.
    4. Crucially: Ensure the drain remains unobstructed. Dormant crawfish submerged in standing water are highly susceptible to drowning.

    FINAL POLICY NOTE: NO REFUNDS WILL BE PROVIDED FOR LIVE CRAWFISH HELD OVERNIGHT.

  • What states can you not ship live crawfish?

    Due to various state regulations concerning the importation and transport of non-native species, we are currently unable to ship live crawfish to the following states:

    • Alaska
    • Hawaii
    • Illinois
    • Michigan
    • Washington
    • Wisconsin
    • Minnesota – Importation of live crawfish is prohibited. Boiled crawfish may be imported with a required, free-of-charge permit. Permits can be obtained using the direct link at /Boiled-Crawfish. Once obtained, please forward a copy to info@lacrawfish.com.
    • Oregon – Residents must obtain a Crayfish Transport Permit prior to shipment. The state assesses a fee of $14.00 per permit. The permit is valid for seven days before and after the selected date on the application. You will need to visit the Oregon Department of Fish and Wildlife(Opens an external site in a new window)‘s website to create an account and from there you will be able to purchase the Crayfish Transport Permit. Once the permit is purchased, please forward a copy to info@lacrawfish.com.
    • Pennsylvania – Live crawfish may only be shipped to specific commercial or institutional entities. Shipping to residential addresses is strictly prohibited.

  • What are Water Boatmen Eggs?

    During the molting season, Water Boatmen (Family Corixidae) may deposit their eggs, often referred to as “nits,” on the exterior of the crawfish, particularly near the head and eye regions. This occurrence is typically observed later in the season, after the crawfish have undergone fewer molting cycles.

    Rest assured, the presence of these eggs does not affect the quality, texture, or flavor of the crawfish meat. They are entirely safe for consumption. A proper, robust boil is sufficient to eliminate and sanitize the crawfish, ensuring a safe and enjoyable dining experience.

  • What do I do when my crawfish arrive?

    Upon arrival, it is essential to immediately open the shipping container and follow these steps to ensure the vitality of the live crawfish:

    1. Immediate Unpacking: Remove the sack of crawfish from the container promptly upon receipt.
    2. Rinse and Chill: Gently spray the sack down with fresh water, allowing the water to drain completely.
    3. Store and Drain: Return the sack to a cooler or an ice chest equipped with a functional drain. Top the sack with loose ice.
    4. Crucial Note on Drowning: Ensure that melted ice water drains freely. Dormant crawfish submerged in standing water are highly susceptible to drowning.
    5. Preparation for Cooking: The cold temperature will induce a dormant state. Prior to cooking, lightly spray the sack down with water again to “wake” the crawfish.

  • What is the species name of our crawfish?

    Procambarus Clarkii, commonly known as the Red Swamp Crawfish. 

  • What is purged crawfish?

    Our crawfish undergo a specialized purging process involving placement in holding tanks containing clean, highly oxygenated water for a period of 12 to 14 hours. This innovative technique facilitates the cleansing of the gills and a significant portion of the internal entrails.

    Please Note: While this method enhances cleanliness, it is important to understand that it does not result in the full elimination of the digestive tract contents.

  • How much crawfish should I order per person?

    We offer the following guidelines based on common dining scenarios:

    • Standard Meal: Plan for 3 pounds per person when crawfish is the primary feature of the meal.
    • Side/Appetizer: Plan for 1.5 pounds per person when crawfish is served alongside other main proteins.
    • Enthusiast Eaters: For seasoned crawfish consumers, serving sizes may increase to 5 pounds or more per person.

    Note: Individual consumption rates can vary significantly based on the diner’s familiarity with the product and personal preference.

  • What if I receive dead crawfish?

    We guarantee live arrival. A small amount of “dead loss” (less than 5%) is normal during transit. If your dead loss exceeds 5% of the total weight, please take clear photos of the deceased crawfish and contact us immediately upon receipt – must be day of delivery.

    We had the crawfish delivered Saturday, a day before Father’s Day. We were able to keep them alive until Sunday and it was awesome. I have nothing bad to say, these things were huge and so fresh. Being from New England, live crawfish is hard to come by. And when we do, it’s usually small. Most times, we just have them frozen so for the fact that it was huge and fresh was a huge plus. I don’t think I ever seen the insides gills bright. They’re usually black or dark for us. My family had nothing but good things to say. My mother even ate the meat from the claws. Definitely will order again!!

They were quick to make the adjustments for me. On Friday, unfortunately there was a delivery delay due to weather which was completely out of everyone’s control. The order had already been shipped but would be delivered by Saturday. LA Crawfish was very proactive to alert me of this delay and gave me 3 different options to help remediate the issue. A lot more than ever received. The ice packs were slightly cool not cold. We opened the package just a little over 30 minutes from receiving the package. Last year we also got the 20lb and I would say maybe 10-15 were dead which is acceptable. We know some will not make the trip but overall the were great.     We got 60lbs of the purged crawfish for our annual 4th of July party, and everything went off without a hitch! Since they were delivered the day before, we added some damp towels and switched out ice packs to insure they did not wake up until we were ready to boil, and I don’t think there was a single one not still alive. Total hit at our party, but we WAY over ordered based on all recommendations of at least 2 lbs per person…forgot to take into account that in CO people just don’t normally eat that much crawfish! We still cooked it all, iced it, and my husband and I took the extra time the next day to shuck all the tails, make some super rich seafood broth, and freeze it all for the future. Will definitely be ordering again, just maybe enough next time for only the two of us!!

Well, those bugs decided they were going on a vacation of their own, because FedEx held them up in Memphis and they perished on their long journey when they arrived the next week. FedEx redirected the original travelers to us, but sadly there was not a one that survived. I called and explained the casualties and LA Crawfish got us out a new shipment of Selects midweek with UPS! UPS for the WIN! All bugs arrived safe and sound with not one single casualty. My husband and our 11 yo son scarfed down those suckers like it was their last meal! Thank you for the amazing service, despite FedEx’s mishaps. I had two happy guys stuffed like ticks.. that I practically had to roll to the couch after supper!! You guys are amazing!

Only complaint is that if I add extras, I have to do two orders (like for beignets mix, or coffee or extra spice), it adds it to the cart for an overnight delivery just like the Crawfish. This added the cost up to an additional $60 in shipping, but those items can ship regular for like $20. Aside from that, crawfish arrived alive, lively, and boiled up delicious!

    This is the fourth time I have ordered from Louisiana Crawfish Co. and they have never let me down. It is always an easy process and smooth delivery. The product is always on time and fresh. This last batch was amazing very large bugs and only about 5 or 10 dead ones in a 30lb sack. I highly recommend these and I will continue to purchase from Louisiana Crawfish Co.

    To start off, they were shipped at 9 am, and recieved a 910 am the next day. Of 15lbs, we had maybe 15ish dead(not bad). The original seasoning had plenty of spice and was very good. We added lemons, oranges, garlic, and celery. Everyone was very happy, hope to do it again real soon.

    In 2021 as a family we started looking for a new place to eat crawfish (budbugs). Our favorite place in Denver Colorado decided to close there doors in 2019 and as a family we spent 2 years trying to find good bugs. Not an easy task in Colorado. One day I started looking in the web and found Louisiana crawfish company and could not be more happy. It brings the family together and the bugs are fantastic.     Excellent. We sometimes order in February and the crawfish are not as good and many die in transit. But at this time, they all pretty much make it and they are larger. Love the purged option. This 10 pounds was great. I usually order 15 pounds (for 2 people) because a bunch don’t make it. This time, I saw only “2” that were dead. I have been ordering for 20 years. I love it. Thank you!

    I was having a party with 40 people coming over. I called and talked to a customer service representative. She was very helpful and told me how to keep the crawfish alive for almost 24hours. When I get them all out I only had a few dead ones. I will order again and was very pleased all the way around!

    I recently ordered 20 lbs of Select Purged Crawfish and everything came out as expected. At the time of arrival most of the crawfish were alive with the exception of a few (which is expected). Only complaint is that I would love to order some jumbo sized crawfish, but it seems to me that is rarely available! Aside from that, I was very pleased with my order and I look forward to continue ordering from Louisiana Crawfish.

    Great experience with the purged crawfish. Delivered on time, very few dead, and turned out delicious! Only thing I’ll do different next time is get the extra spicy seasoning. The original is quite mild for my taste.
